tamale casserole

here's a very quick but hot and satisfying meal

pre-heat oven to 350degrees

dozen tamales, warmed and unwrapped

enough chili con carne [or a can of wolf brand chili] to cover tamales

shredded cheese

diced onions and jalepenos [optional]

place tamales in a casserole dish and sprinkle some cheese and diced onions over them
cover them with the chili, there should be enough to 'drown' the tamales
-you may also put pinto beans over them at this point if you want
cover with remaining cheese, onions, and jalepenos
garnish with paprika and cilantro
bake uncovered for 20 minutes until heated thoroughly

serve with Spanish rice or lettuce and tomato salad
